Ideal Protein Cupcake “Treat Pops”

This recipe is being shared by a very talented, super-star dieter–who just happens to be a fabulous baker. This dieter is combining her super moist Ideal Protein cupcake recipe with Ideal Protein puddings.
If you like, you can make this recipe in a glass bowl with some Walden Farms syrups or jellies for a faux trifle.
Regarding serving size: 4 Ideal Protein packets makes 6 “Treat Pops”. One portion would be 1 and 1/2 Treat pops. If you use a glass bowl you would adjust the portion size by the size of the bowl.
Cupcakes
1 packet Ideal Protein Crispy Cereal, crushed
1 packet Ideal Protein Vanilla Drink Mix or Chocolate Drink Mix
½ teaspoon baking powder
½ teaspoon baking soda
Mix dry ingredients well.
Add:
4 ounces water -OR- 3 ounces water and 2T Torani Sugar Free Syrup in the flavor of your choice
1 ½ t Apple Cider Vinegar
NOTE: If you’re going to use Torani Sugar Free Brown Sugar Cinnamon Syrup, it’s nice to add ½ teaspoon cinnamon to dry ingredients.
Mix and then fill 20 mini cupcake tins well sprayed with canola oil. Bake at 350 for 11 minutes. Let cool.
Frosting layers
2 packets of Ideal Protein pudding
4 ounces of water for EACH pudding packet.
Make puddings separately. Mix well and chill.
NOTE: To make mocha pudding “frosting,” dissolve 1 teaspoon instant coffee in a bit of warm water, then add cold water to equal the 4 ounces before adding pudding powder.
Make the puddings and chill for at least one hour.
Instructions (from Wilton Treat Pop packaging)
To assemble, pull the stick down to the lowest position so that the tube is fully open. Make sure squares on base and tube align. Place cap on work surface and insert end of stick into top of cap for easy decorating. Place one cupcake into the tube, and push it all the way into the bottom. Pipe pudding frosting using a decorating bag and #8 or #10 tip (or just a baggie with a small corner cut off). Use a swirl motion starting at the outside edge of the cake and moving to the center. Repeat layers to fill the tube, ending with pudding/frosting on top.
Top with crushed Ideal Protein soy puffs. It only takes 3-5 puffs to make enough crumbs to top a cake pop.
